the speech
walking into a restaurant with celiac disease is a risk every celiac is willing to take in order to eat out. no matter where you go, who is serving you and how clean the kitchen is there is a risk that you may get "glutened" along the way. (glutened is a term used by many celiacs that would best be defined as an incident when a gluten free person accidently ingests and/or is exposed to gluten).
the speech is something that I give to every server, restaurant manager and chef (yes, I sometimes speak to the chef) that I communicate with when I dine out at a restaurant. no matter how often I eat at a certain place and/or how well I know that I am "safe", I still give the speech. it is safe to assume that all celiacs have their own version of the speech and can recite it in their sleep. I am proud to say that my family and friends can and do happily recite the speech on my behalf on a regular basis.
